Winter Spiced Berry Cobbler with Cardamom Biscuits

Winter Spiced Berry Cobbler with Cardamom Biscuits is a healthy sweet treat perfect for a cozy holiday night-in. Biscuits are gluten-free and the dessert can be made vegan friendly. Add a dollop of coconut yogurt for a delicious breakfast!

It doesn’t get much better than the aroma of a freshly baked berry cobbler being pulled from the oven…Sweet berries exploding at the seams, flavoring the under layer of perfectly golden cinnamon-biscuits. This is my dream holiday dessert - one made in a flash and one that evokes the coziness of the season with every warming bite. 

This is why I am over the moon to partner with my favorite berries by California Giant Berry Farms! I have been using their berries my entire life and this is a dessert that I’ve seen my family make hundreds of times over the years. My mom is a stewed fruit dessert fiend and this cobbler is such a nice departure from the traditional holiday berry pie. For one thing, it’s so much easier as you just toss everything into a skillet to cook up all on it’s own! You could technically stop here and just enjoy the stewed berries on it’s own, but then you would be missing the flaky gluten-free spiced biscuits that makes this dessert unworldly delicious. And guys, I am not exaggerating one bit here. This cobbler has been tried and tested so many times (not a bad job for my friends/family ;) and hands down it’s a crowd pleaser. ps: if you add a dollop of coconut yogurt on top it can also double as a delicious breakfast. Oh (!) and don’t forget a scoop of ice cream on top for good measure - it’s the holidays anyways ;)

2-Berry-Cobbler-Gluten-Free-Healthy

Recipe:

Serves: 6-8

Filling:

1 tsp ghee or coconut oil

5 cups Cal Giant Berries mixed berries

1 & 1/2 tsp vanilla extract

1 tbsp arrowroot powder (or cornstarch)

Pinch of sea salt

Spiced Biscuits:

1 cup all-purpose gluten-free flour

1 tsp baking-powder

1/2 tsp cinnamon 

1/4 tsp cardamom

3 teaspoons coconut sugar, plus extra for topping 

4 tablespoons chilled unsalted ghee or coconut oil (if ghee - cut into ¼” cubes) 

2 tbsp almond milk

3 tbsp coconut yogurt

Pinch of sea salt

Start by preheating your oven to 400F and prepare the filling. With the ghee/coconut oil rub the sides and center of a 10” cast iron skillet. In a medium mixing bowl toss together the berries, vanilla, arrowroot and sea salt. Pour the mixed berries into the skillet and place on the stove top. Over medium heat, cook the berries for 10 minutes - stirring frequently, until they’re slightly stewed and some of the juices have released.


In the meantime prepare the spiced biscuits. In a mixing bowl, combine the flour, baking powder, spices and coconut sugar, and mix well. Now add in the chopped ghee. Gently with your fingers, blend the ghee into the mixture until it resembles coarse meal. Set this aside while you mix together the almond milk and yogurt into a small bowl. Pour this mixture into the batter and mix gently until it forms a dough - be sure to not overmix. 

Add spoonfuls of the dough on top of the stewed berries and add a sprinkling of coconut sugar to the top of the biscuits. Pop the cobbler into the oven and bake for 20-22 minutes, or until the biscuits are golden brown. Serve in bowls with a dollop of ice cream. Enjoy!
