Oven Roasted Blueberries and Honeyed-Hazelnut Clusters over Goat Cheese Toast! a.k.a. heaven on toast!

I know we’ve all stewed berries before, but have you ever roasted blueberries? No? Me either until recently and wow, it is a whole other experience! I love this way of cooking because as you slowly roast the berries they become warm, tender and juicy, yet still maintain their shape and only burst with flavor the moment you bite into the toast! It’s just something that you have to try….asap ;)

I also love how we’re using blueberries to balance out the savory notes from the toast and the goat cheese. Berries might not be your first thought when preparing a savory recipe but similar to our grain bowl recipe, the subtle sweetness of the berries round out the whole meal, adding in a depth of flavor. Just fantastic!

And I am so thrilled to be working with my absolute favorite berries by California Giant Berry Farms! Their delicious berries add an undeniable quality to each and every one of our recipes :)

And what a great way to easily add in antioxidants to your meals! Which I’m sure we could all use a little extra boost during this time of life.

Enjoy this delicious toast you guys!

Roasted-Blueberry-Toast

Full recipe: Serves 2

2 slices of sourdough toast, or any toast

1 (4oz) Cal Giant Berries Blueberry pack

Small handful hazelnuts and pistachios, roughly chopped (or any nuts/seeds)

1 tsp honey, or maple/date syrup

Any soft cheese of your choice - we’re using a vegan goat cheese but ricotta, mozzarella or burrata would work great

Sea salt

Fresh mint, optional but nice if you have it

Instructions:

Preheat your oven to 350F. In a small parchment paper lined baking tray, place the blueberries to one side. On the other side toss in the nuts. Drizzle the nuts with the honey and a pinch of sea salt on both the nuts and berries. Roast in the oven for 15-18 minutes, until warm and tender. In the meantime, prepare your toast. Toast your bread and then add a generous smear of cheese on top. Once the berries have cooled slightly, add it onto your toast along with the nut clusters and a few sprigs of mint. ENJOY! This one is truly outstanding.
