When I lived in Italy, gnocchi became my absolute favorite pasta. I remember having a home cooked dinner with an Italian family and the mother taught me how to make fresh, delicate little gnocchi dumplings. She also had not one, but FOUR homemade sauces for the gnocchi! We aren’t going that all out today. But we are making something similar to her simple tomato sauce that became my absolute favorite of the bunch. 

We’re making a wildly delectable Pan-Seared Gnocchi with Blistered Cherry Tomatoes! After I made this recipe for myself and a friend, I immediately called up my parents telling them that I know exactly what I’m making for our holiday dinner…this delicious pan-seared, tomato adorned gnocchi! 

And guess what?! The entire meal comes together in less than 20 minutes, with only one real ingredient for the sauce: MiMi Tomatoes by Sunset! Yup, that’s it. Tiny cherry tomatoes do all the heavy flavor lifting for this dish.

Pan-Seared Gnocchi with Blistered MiMi Tomatoes:

Serves 2-3

1 (16 oz) packet of gnocchi

1 tbsp olive oil 

1 container of Sunset MiMi Gourmet Tomatoes, halved and some leave whole

1 tbsp unsalted ghee, butter or vegan butter

Handful fresh basil 

Handful of parmesan cheese or vegan cheese

Pinch of sea salt 

Start by cooking the gnocchi as the packet instructs. 

In a large saute pan warm the olive oil on medium heat. Toss in the tomatoes and add a sprinkling of sea salt. Cook until the tomatoes soften, blister and release their juices - about 5-7 minutes. With the back end of your fork, press down on half of the tomatoes to release the juices even more, creating a thin sauce. Set aside while you brown the gnocchi. 

Melt the ghee in a medium saute pan on low heat. Once the gnocchi has cooked, add it to the melted ghee and sear on medium heat until each side of the gnocchi has browned. About 2-4 minutes per side. 

Add the pan seared gnocchi into the tomato sauce and mix well. 

Plate with a shaving of parmesan cheese, pepper and fresh basil. Enjoy!
