Warm Berry and Smashed Cookie Trifle

A delicious Trifle dessert that is naturally healthy with coconut yogurt, warm berries and chocolate chip cookies. This recipe can easily be made vegan and gluten-free.

If there is one thing I can not live without, it is dessert. But I am not one of those ‘oh I only like chocolate’ or ‘oh I only eat cookies’ kind of people. No you see, my mother raised me to eat and love alllll types of dessert (lol)! There is not one single sweet that I don’t crave. So, in order to satiate my sweet desires, I decided to combine the best of them into this utterly delicious trifle! But this is no ordinary trifle. We’re elevating and healthifying it by swapping out some of the traditional ingredients in lieu of ones that add more nutrition and vitality to your body and life. I want to have my trifle and feel good about eating it too ;) 

It’s a super simple recipe that comes together in 5 minutes, and if you have kids this is a perfect thing to make with them since all we’re doing is preparing the jam and layering in the delicious ingredients! And I’m sure they’d love the smashing of the cookies portion too :)

We’re using a mix of my all time favorite blackberries and raspberries by California Giant Berries to create the warm stew. These berries have been unreal this season! Bursting with sweetness and so very juicy to the point where I find myself eating half the container before I can even make the jam! You gotta get your hands on these berries you guys - they’re incredible.

And I promise you, this recipe checks all the boxes:

  • Chocolate - yes

  • Cookies - yess

  • Stewed berry sweetness - yesss

  • And a creamy element from coconut yogurt (or hey, even swap it for coconut ice-cream!) - yessss

Oh, one last thing! You can even make this in advance and have dessert ready for a few nights in a row - just saying ;)

Serves 2

2 cups vanilla coconut yogurt, divided 

2 cups mix of California Giant Blackberries and Raspberries 

Zest of 1 orange and squeeze of half the orange 

2 tsp chia seeds 

1 & 1/2 cups of cookies, crushed - I use chocolate chip cookies 

To make the jam layer, add the berries, orange zest and juice, chia seeds and a dash of water into a saucepan and simmer for 5 minutes on medium-low heat. Mash the fruit as it simmers, but leave a few pieces whole for the texture. Allow the mixture to thicken and reduce down. Set aside to cool.

Once the jam mixture has slightly cooled, take a glass and layer in all the ingredients. Start by layering in a handful of the jam, a layer of crushed cookies, then the coconut yogurt, and repeat until you’ve run out of ingredients. Enjoy now or store in the fridge until you’re ready to eat!
