Summer Chia Pudding and Smoothie Parfait

A breakfast recipe two for one - a hearty fruity chia pudding layered with a silky smooth basil and mint summer smoothie. Naturally vegan, gluten free and DELICIOUS.

This recipe goes out to all those chia pudding and smoothie lovers, and indecisive eaters out there! Instead of choosing between one or the other, we’re simply enjoying BOTH for breakfast ;)

These two luscious recipes were what got me to enjoy healthy cooking nearly a decade ago! When I started cooking this way, it was as if A whole new way of cooking opened up and I got to see the true beauty of fruits and berries…which at their core, are little delectable flavor bombs!

So to celebrate the abundance of fresh summer berries, we’re infusing each recipe with nearly all the amazing california giant Berries! And what I absolutely adore is that when we use these berries, we don’t need any extra maple or honey in either recipe because the berries envelope the entire parfait in a natural sweetness that is undeniable and utterly delicious.

There is a reason why this recipe has been a mainstay for nearly a decadent…and I know it’s time for you to try it too and reap the benefits of a 2 for 1 breakfast that is equal parts scrumptious, nutritious, gorgeous, effortless and fun to make. Did I convince you yet? ;)

Summer Chia Pudding and Smoothie Parfait:

Serves 1-2

For the Chia Pudding:

1 cup oat milk

3 1/2 tbsp chia seeds

1/2 cup California Giant Berries Blackberries

1/2 cup California Giant Berries Raspberries 

For the Smoothie:

1 frozen banana 

1/2 cup California Giant Berries Strawberries 

1/2 cup California Giant Berries Raspberries

Small handful mint leaves  

Small handful basil leaves  

1/3 cup coconut yogurt 

1/2 cup oat milk 

Top with:

Granola 

Fresh fruit 

Fresh herbs 

Nut butter 

To make the chia pudding, add all the ingredients into a bowl and mix well. Pop in the fridge to set overnight or for at least 4 hours. 

When it is ready to serve, make the smoothie by adding all the ingredients into the blender. Pour the chia pudding into a glass, then pour the smoothie on top, and top with whatever you’d like. Enjoy!
