Tahini Caramel Fruit Bars!
These gooey, crispy, chocolatey bars are a blast from the wellness past and are just as indulgent now as they have ever been.
Back in 2012 when chia pudding, energy balls and bircher muesli were hitting the food scene, it was as if an entirely new world was opening up to me. It was unlike anything I had even experienced before. I was in total awe of the possibilities of what you could create with such ingredients, and ones that I had never heard of before like medjool dates, tahini and puffed quinoa…
It was almost as if my reality got a reboot and life just got really freaking cool, and I ate it alllll up…literally ;)
I dove head first into the world of juicy dates, endless smoothie and I loved every second of it. These kinds of recipes, ones that are nourishing and rooted in delicious food abundance, are just so FUN, playful, and remind you of the limitless possibilities of what you can create when the base is just so damn good to begin with.
And I am just so in love with the flavors and textures of this Tahini Caramel Fruit Bar! We have a mix of our gorgeous and fresh California Giant Berries Blueberries and Strawberries, folded into this luscious date-caramel mix with crispy puffed quinoa. The berries add a freshness, an aliveness, that cuts through the heartiness of the tahini and puffed quinoa. And honestly, what a fun way to use your berries!
I’m telling you…this flavor combo is sensational! I highly doubt you will just eat one bar…that’s pretty impossible. I actually have to keep them in the back of the freezer, so I don’t polish them off asap! Lol
Not only are these bars insanely delicious, they also make me feel good from the inside out :)

Caramel-Tahini Fruit Energy Bars:
Makes 12-15 bars
1 & 1/2 tbsp olive oil
10 medjool dates, pitted and roughly chopped
1 cup tahini or any nut butter you love
1/3 cup California Giant Berries Strawberries, roughly chopped
Handful California Giant Berries Blueberries
1/2 cup mix of toasted pistachios and cashews, roughly chopped
1 cup puffed brown rice or puffed quinoa
Pinch of sea salt
3.5 (oz) bar dark chocolate, melted
Top chocolate with extra flakey sea salt
Take the chopped dates and using the back of a fork, mash the dates into a paste.
In a small saucepan over low heat, warm the olive oil, and add in the date paste, nut butter, blueberries and strawberries. Stir for about 1-2 minutes until combined - careful not to burn the nut butter. Remove from the heat and add in the pistachio, puffed rice, sea salt, and mix well.
In a lined baking sheet, pour the batter in and spread evenly until the batter is 1/2 inch thick. Pour the melted chocolate over and sprinkle with sea salt. Pop in the fridge to set for about 30 minutes. Once ready, cut in squares and enjoy!
