I know we’ve all heard of whipped ricotta toast, but in honor of being in our ‘protein era’, I present you with the most unexpected yet delicious pairing -*whipped cottage cheese with macerated berries!*

We’re elevating our cottage cheese by blending it into a silky texture, and topping it with juicy California Giant Berries!

All you need is…

The bread brings the base, the berries bring the punch of flavor (which is essentially for how simple this recipe is), and the whipped cottage cheese brings the luscious texture and protein!

For the whipped cottage cheese:

1 cup cottage cheese (full-fat for best texture)

For the macerated berries:

1/3 cup California Giant Berries Strawberries 

1/3 cup California Giant Berries Blueberries 

1/3 cup California Giant Berries Raspberries

1–2 tsp sugar

For the toast:

2 slices of sourdough, toasted
Top with fresh basil

In a small bowl, toss the berries with the sugar. Let them sit for 10–15 minutes to get nice and juicy. The sugar will pull out the juices and soften everything into a syrupy, spoonable topping.


Add the cottage cheese to a blender or food processor. Blend until completely smooth and creamy - like whipped ricotta. Scrape down the sides if needed to get everything silky. Transfer to a piping bag or zip-top bag with the tip cut off if you’re feeling fancy, or just spoon it on.


Toast your bread and then pipe or spread a generous layer of whipped cottage cheese on top. Spoon over the macerated berries and garnish with fresh basil. Enjoy!
