Pesto-Tomato Gnocchi with a giant burrata ball…all in one pan!

I was playing in the kitchen and was FLOORED to discover that you can actually cook gnocchi, not just in boiling water, but simply on a sheet pan! 

And not just that! BUT you can also cook it at the same time with all the ingredients to make up a delicious tomato sauce.

I have a soft spot for these Angel Sweet Tomatoes by sunset produce.


Anytime I come across a tomato that bursts with sweetness, just like these, it wins over my tastebuds. 

And that level of juicy sweetness is what makes for a flavorful pasta sauce.

Toss these ruby red beauties onto the sheet pan with the gnocchi, and bake it off baby! 

See, I told you it would be easy.

And to top it off - drizzle some pesto and cut into one big ole’ creamy burrata ball.

Because who doesn’t want all the best that Italy has to offer in one delectable bowl.

Roasted Tomato, Pesto and Burrata Gnocchi Sheet Pan

Serves 3-4

1 pint Sunset Angel Sweet Tomatoes

1 (16oz) package uncooked gnocchi 

1/2 small yellow onion, sliced into 1/2 rings 

3 tbsp olive oil

Juice of 1/2 small lemon

Sea salt 

Top with: 

Pesto 

Basil leaves

Burrata cheese 

Preheat the oven to 425F. On a parchment paper lined baking tray add the tomatoes, gnocchi, onion, olive oil, lemon juice and sea salt, and mix well. 

Pop into the oven to cook for about 25 minutes, or until the tomatoes have blistered and released their juices. 

Remove from the oven, and now drizzle the pesto all over the gnocchi and tomatoes. Mix well in the tray.  Serve the gnocchi in bowls and top with burrata and basil. Enjoy!
