VIDEO: Mushroom Bacon Sandwich with Avocado Cream Spread
How to make a vegan Mushroom-Bacon BLT Sandwich! A healthy and delicious alternative to bacon that is full of nutrition and comes with a special avocado cream sauce that you do not want to miss!
This is the meal that I've been eating nonstop. I mean 'mushroom bacon'...I know, it sounds a little strange, but trust me on this one, it is utterly unreal. The taste mimics bacon and it's a much healthier alternative. It's a win-win.
So, today I'm showing you just how to turn Shiitake Mushrooms into Crispy Bacon Pieces! It only takes 3 main ingredients and it's kind of crazy how identical they taste to bacon. We're using Guan's Mushrooms for a healthy twist on a classic BLT - adding lots of vitamins and nutrition to each bite. And then we wrap it in a delicious Avo-Cream Sauce for even more flavor.

Guan’s Shiitake Mushroom Bacon:
10 Guan’s shiitake mushrooms, de-steamed and cut into 1/4” slices
2 tbsp avocado oil
1 tbsp coconut aminos or tamari (or soy sauce), use a little less if using tamari since it’s saltier and stronger in flavor
pinch of sea salt
Pinch of pepper
Avocado-Cream Sauce:
1 avocado
1 tablespoon coconut yogurt
1 handful fresh cilantro
Juice of 1 small lemon
1 tablespoon olive oil
1 teaspoon maple syrup
Pinch of sea salt
Top with:
Fresh bread
Sprouts
Radish slices, optional
Cucumber, thinly sliced
Tomatoes
Butter lettuce
Avocado-cilantro dressing
Start by pre-heating the oven to 375F. To make the mushroom bacon, add the sliced mushrooms to a large mixing bowl with the rest of the ingredients. Mix well, so that the oil and coconut aminos absorb into the mushrooms. On a parchment paper lined tray, spread the mushrooms out evenly, make sure none are overlapping - this will make the bacon soggy. Bake for 25-35 minutes, depending on your oven. When the mushrooms are cooked and crisp, removed from the oven and set aside to cool - this is when the mushrooms harden and get even crispier.
In the meantime prepare the avocado dressing. Simply add all the ingredients into a food processor or blender and mix until creamy.
To assemble the sandwich, first add a generous layer of avocado cream to the toast, then the cucumber, lettuce, sprouts, radishes and crispy bacon. Enjoy!
