The Refreshing Green Drink
A delicious green drink that has the freshness of mint and cucumbers, paired with the sweetness of coconut water and dates. Blended in minutes creating the perfect green drink - part smoothie, part green juice.
Take a handful of fresh mint, spinach and coconut water, blend for a few minutes and what you have is a refreshing green drink - not really a smoothie and not really a green juice. San Francisco is dotted with an abundance of fresh pressed juice and green smoothie shops, everyday you can explore something new. While I never adopted the green smoothie trend, I do love a delicious green drink. But as spring approaches and in attempts to savor every moment enjoying the warmth of the season, I opted to create a drink quick enough to make in minutes and easy enough to grab as I walk out the sunlit door.
This green drink rests in the middle – balancing the fullness of a green smoothie, while offering the freshness of a green juice. Coconut water and dates offer a subtle note of sweetness, while the mint and cucumber wrap the drink in a fresh coolness – reminiscent of a tropical mojito. The lovely part about this recipe is that anyone can make it. It doesn't require a fancy juice machine, only a blender. In a matter of minutes you have a refreshing midday snack. A drink that encourages you to hurry out the door so that you have as much time outside, savoring the beauty of the spring.
Serves: 1
Prep Time: 5 minutes | Cook Time: 2 minutes
Ingredients for the Refreshing Green Drink:
- 2 large handfuls of spinach
- 1/2 of a large cucumber
- 1/2 cup of coconut water
- juice of 1/2 lime
- 1 or 2 tablespoons of fresh mint leaves
- 1/2 cup of ice
Instructions:
Simply place everything into a blender and mix on a high speed until the spinach is completely broken down and blended into the drink.
