Colorful Coconut Porridge
A healthy, easy-to-make, breakfast perfect for busy mornings. Creamy coconut milk, blueberries and oats creates this delicious porridge.
Instant oats alone with water doesn’t scream delicious breakfast. But oats swirled in creamy coconut milk and popped blueberries, mingling with sweet honey and cinnamon is a breakfast that I will gladly get up for. Breakfast has come along way since Quaker Oats tried its hand at making instant oats appealing and convenient. Just add water and its pre-spiced mix will take care of the rest. While I appreciate the convenience, this just doesn’t seem appealing or highly nutritious. Instead, take the simplicity that QO had in mind, add a few spices, fruit and you’ve quickly improved upon a once bland meal.
A simple base of creamy coconut milk and blueberries transforms this staple into a nourishing and delicious breakfast. The creamy coconut adds a rich, tropical taste, while the blueberries slowly release their sweet juices. As the blueberry juice cooks into the oats, it not only creates a sweet delicious aroma but a gorgeous purple hue, even making the breakfast visually appealing. This meal also follows the easy and quick breakfast philosophy by only taking 5 minutes to make. This is even something you can make the night before, place in the refrigerator and reheat while at work or university. Allowing for a peaceful, stress free morning – and we all need a little of that from time to time.

Ingredients for the Coconut Porridge:
- 1/3 cup rolled oats (old fashion oats)
- 3/4 cup coconut milk (I like light)
- 1/4 cup water
- 1/2 ripe banana
- 1 handful of blueberries
- 1 teaspoon cinnamon
- 1 teaspoon honey if you prefer it sweeter (optional)
- 1 teaspoon maca powder (optional)
Instructions:
Simply add the oats, coconut milk, water, blueberries and slices of banana to a saucepan and heat on medium-low for about 5-7 minutes, until all the liquid has been absorbed and you are left with a creamy porridge. Now stir in the cinnamon, maca powder, honey and mix well. Pour into a bowl and enjoy with your favorite toppings!
