Simple Sea Salt Caramel Chews

Raw and vegan sea salt caramel chews made simple with dates, coconut milk, almond butter and sea salt! A sweet treat, ready in minutes, thats delicious enough for any sugar fiend.

Dates on their own are the embodiment of a simple snack. But when paired with other ingredients, quickly becomes elevated to a new way of enjoyment. Take the date: blend it with creamy coconut milk and vanilla essence, and top with sea salt. Just like that, you have recreated the traditional caramel chew!

 These caramel chews are a beautiful example of how easy it is to take nutritious ingreidnts and create nourishing treats with a few tweeks to an otherwise classic recipe. Having an irrevocable sweet tooth, I tend to indulge in caramel chews (especially over Easter). As much as they are delicious they are equally hard on my stomach and teeth. But removing all indulgence for the betterment of my healthy doesn’t seem like a sustainable fix to me. This is why I love experimenting with dates as the base of any dessert!

 Dates - high in fiber and iron, with a texture and taste that mimics caramel. Sticky dates envelop creamy coconut milk, while the vanilla essence perfumes these treats - leaving you with a dreamy sweet caramel chew. Plan ahead and make a batch to bring to a party or picnic. They are also a great snack when you’re looking to satisfying a late-night sugar craving! Whether you blend dates into a sweet treat or enjoy them on there own, rest in knowing that they are good for you while sparking a caramel frenzy in your mouth.

Serves: 15 pieces

Prep Time: 5 minutes | Cook Time: 5 minutes

Ingredients for the Sea Salt Caramel Chews:

- 2 cups pitted medjool dates (only medjool dates will work as they are very juicey and moist)

- 2 teaspoon date syrup (or honey)

- 1 tablespoon almond butter

- 2 tablespoons full-fat coconut milk

- sea salt

Instructions:

Simply add all the ingredients to a blender and mix until smooth and creamy!  Taste to see if you would like to add another date or tsp of honey to make it sweeter.  Pour out onto a small pan and press evenly into the pan – leaving the mixture about 1/2  inch tall. Cut and wrap into individual pieces like below and/or store in the freezer for a week!

Enjoy these caramel chews you guys! I had my family and friends try them over Easter weekend and they LOVED it! My favorite way is to store them in the freezer and eat a few after dinner!
