This week I took an avocado, scooped out the center, stuffed it with chili chickpeas and green peas, and baked it until warm and spicy! Most days I use avocados in its most singular use, a salad. Even though I adore salads and tend to throw anything and everything into a big bowl of greens (yes, to fruits, nuts and grains!), it can at times become a tad bit redundant. So instead of opting for another salad with avocado, I decided to stuff...

Thinking of the right stuffing I rested on my Chili Chickpea recipe that is bold in flavors. Simmering in a bath of spicy chili flakes and honey, the chickpeas absorb each flavor, creating an intriguing contrast of heat and sweet amongst a creamy avocado. Following the dead-quickness of a salad, stuffed avocados baked away in the oven only takes minutes to make and leaves you with a nourishing meal with a quick cleanup. Prep Time: 5 minutes | Cook Time: 15 minutes

Ingredients for the Stuffed Avocado with Chili Chickpeas:

- 2 avocados

- 1 cup of frozen peas

Instructions:

Start by preheating the oven to 350F. Then make the chili chickpeas by following this quick recipe here and add the frozen peas to the saucepan (defrost the peas by running them over warm water for a minute). Then cut the avocados in half and scoop out a bit of the flesh from the center (think about digging a little whole in the middle) and save the rest for a later salad. Then stuff the avocados with the chili chickpeas, place on a baking tray, and cook for 10 minutes. Enjoy!
