Cashew and Coconut Butter
A near addicting Cashew and Coconut Butter that is creamy and rich with hints of tropical coconut and sweet vanilla powder. A quick snack for a delicious afternoon-pick-me-up! Enjoy it spread on toast, stuffed into dates, on top of fruit, in smoothies or all on its own.
You know that feeling when you come running home from work, cupboards open, arms spread wide, hands bracing the cupboard nobs and that look on your face suggesting: what am I going to eat, RIGHT now, I am hungggry? Today, yesterday and the day before that I felt this hard, all because I ate the last of this cashew butter. THIS cashew butter is addicting. I will tell you that before you make it you will inevitably eat your weight in cashews and coconuts within 72 hours and it will all be worth it. Your taste buds will be resting in a satiating euphoria because you’ve fed them, and have fed them well with this nut butter.
Creamy cashews are whipped into a tropical nut butter with hints of coconut and sweet vanilla. Scoop a bit out and slather the cashew butter on top of toast, dolloped into a smoothie, or even cashew butter on top of almond butter. I’ve done it and its good. Prep Time: 5 minutes | Cook Time: 20 minutes
Ingredients for the Cashew and Coconut Butter:
- 2 cups raw cashews
- 1/2 coconut spreads or desiccated coconut
- 2 teaspoons pure vanilla powder
- pinch of sea salt
Instructions:
Simply place the roasted nuts, vanilla and coconut into a food processor with a sprinkle of sea salt and blend until a thick and creamy nut butter forms, this should take about 15-20 minutes. If you have raw nuts you can place them into the oven on 350F for 10 minutes to roast. Set aside until they are cool and ready for grinding. Store in an airtight container in the refrigerator and enjoy!
I have to give you guys a forewarning that this cashew butter is highly addicting! I literately eat it all within 3 days! I take it with me in a small mason jar and eat it by the spoonful, on toast, in oatmeal, within smoothies and definitely stuffed into dates! You can have it anyway you like.
