Dreamy Strawberry Smoothie Layered with Chia Seed Pudding
A nourishing, duel breakfast: A Strawberry and Coconut Smoothie layered on top of Chia Seed Pudding for the most delicious and fun breakfast thats made in only 5 minutes.
Having a guest in town means one of two things: either you are a superhuman and have everything prepared even down to laying out fresh towels on their bed or you scramble even as the doorbell rings. I’m in the latter category. And if you’re like me there is a long list of things that don’t get done when your guest is in town: 3 weeks worth of laundry, nightly workout, early workout, any workout, food prep - definitely out the window, homemade nut milk – keep dreamin’, face mask, grocery run, dog walking, filling the gas before the E beep goes off and forgetting to restock on essentials to make a kick-ass breakfast for them.
When friends are in town this breakfast is always a winner, a twofer of great sorts - a strawberry and coconut smoothie topped right onto a bed of coconut chia seed pudding. And if two layers weren’t enough, go ahead and triple it by adding all the summer fruit your hands can hold. I battle with saying that this is possibly one of the most beautiful and delicious breakfasts I’ve-ever-had. It’s also a guest friendly one – simple ingredients with simple instructions. The sweet strawberry smoothie paired with the coconut chia seed pudding creates a tropical melding of textures and flavors. Each layer offers something a little different – fresh fruit starts off the smoothie, leading you into the creamy chia seeds. So this recipe is for those of you out there that adore having guests over but at times ‘forget’ to plan ahead. And cheers to those friends that never seem to mind – this ones for you.

Prep Time: 30 minutes | Cook time: 5 minutes
Ingredients for the Smoothie Layered:
- 1 cup frozen strawberries
- 1/3 cup frozen pomegranate seeds (optional)
- 1 frozen banana
- 1/2 cup coconut water (water or any nut milk)
- 2 dates
- 1 teaspoon honey (optional but suggested if you are using water as a base)
- small handful of coconut shreds (optional but I love it in here!)
Ingredients for the Coconut Chia Seed Pudding:
- 3/4 cup unsweetened coconut milk(or any nut milk)
- 3 tablespoons of chia seeds
- 1 tablespoons honey
Instructions:
Start by making the chia seed layer by stirring the coconut milk. Then add the coconut milk, chia seeds, honey and cinnamon to a small bowl and mix well. Then simply place the chia seed pudding into the refrigerator to expand and settle overnight or for at least 30 minutes.
For the smoothie layer – simply place all the ingredients into a blender and blend until creamy. Then layer half the coconut pudding into the bottom of a jar or bowl and pour half the smoothie on top. Do the same for the other cup and enjoy!
I can't believe its taken me this long to mix a smoothie with chia seed pudding! It really is one of the most delicious and simplest meals. Enjoy you guys!
