Edamame Guacamole sans Avocado

Edamame Guacamole is a game-changer of a spread made with lime, cilantro and chili flakes for an aromatic, fresh, down right, deliciously, addictive guacamole spread for any meal.

Tittering in a beach chair, with the seawater splashing inches from my feet, I feel a warm breeze pass my face. I'm on Maui and if only for a short time, I'm happy, very happy knowing that life slows down while I'm here. 

I open my eyes and see that the server has brought us a green dip to enjoy. It’s bright green, not too creamy, not too chunky and surrounded by a pool of fresh salsa. But what is this dip?  It must be...avocado?  I grab a chip and scoop a large cluster of this unidentified green pile of goodness. Not avocado. But wait, what is it? I grab a chip and give it another go, and another, and one more for good measure, trying to distinguish any familiar flavor. Nope. Nothing. 

Its not too creamy rather quite chunky and lacks the buttery flavor signature of an avocado. Instead its more aromatic, light, fresh and wait....Just wait...Oh my goodness I am eating EDAMAME! 

What brilliant mind thought to bring together edamame, sans avocado, for a down right, deliciously, addictive guacamole?! So without waiting any longer here is the recipe that changed my spread and guacamole game. Maybe you've heard of edamame in a dip before, maybe not but either way it’s a keeper and a nice break from a traditional guacamole. Enjoy a little piece of Hawaii :)

Serves: Many

Prep Time: 5 minutes | Cook Time: 5 minutes

Ingredients for the Edamame Guacamole:

- 2 cups shelled edamame

- 1/2 cup chopped red onion

- juice of 1 lime

- sea salt

- handful of cilantro

- diced tomatoes (optional)

- chili flakes (optional)

Instruction:

For this recipe I encourage you to add more or less onion, lime or cilantro! I like a lot of cilantro so I add even more than one handful. 

Simply pulse the onion in a blender for a few seconds. Then add the rest of the ingredients and pulse until the edamame is blended into big chunks. Enjoy as a spread on toast, for a sandwich, as a dip or as a pesto sauce!
