Matcha, Pistachio & Chocolate Marzipan Bars
Delicious Marzipan Bars are covered in a layer of dark chocolate. Filled with healthy almonds and matcha powder, these marizpan bars are an easy and reinspired take on the classic.
Ever mix up marzipan with fondant? You know the nutty center of marzipan actually thought of as the hard-as-a-rock cake cover that is fondant? No, never? I have. And for about ten years I confused the two desserts while uttering my distain for marzipan, which in reality was fondant…Opps. But even with my recent discovery of fondant, never could I understand why someone would ruin such desserts with a blanket of hard sugar? Or for that matter to burry a perfectly good cake with lack-luster fondant? Why would I want to cut through what seems like plastic to get to the good stuff? But I digress. Now that the two are cleared, I make way for r-e-a-l marzipan. Oh marzipan. Had I never tried a sample of you at the farmers market I might never known your sweet side. I now understand the obsession surrounding marzipan. And rightfully so.
A blending of almonds and pistachios ground to a fine mill with a hint of matcha is a refreshing take on the marzipan that I’ve come to know. Sweet almonds, mixed with coconut sugar, are mellowed by a sprinkling of matcha. With each bar, fragrant matcha powder envelops the nutty layer, leaving notes of earthy green tea. Covered in a shell of dark chocolate, these bars are complete - a little aroma from the matcha, a little sweetness from the dark chocolate and a little healthiness from the nuts. Enjoy, as this is one dessert you can have time and time again. Or until the batch runs out and you’re left to your own devises. And in that case you might as well make another batch, it only takes 15 minutes :)
Serves: 15 bars
Prep Time: 15 minutes | Cook Time: 1 hour (or at least 20 minutes)
Ingredients for the Matcha Marzipan Bars:
- 1 and 1/2 cup almond flour (or ground almonds)
- 1 cup ground pistachio nuts
- 1 cup coconut sugar
- 1 teaspoon matcha powder (I used Amoda Tea Matcha)
- 1 teaspoon water
- 1 teaspoon lemon juice
- 1 bar dark chocolate
Instructions:
Simply grind the pistachio nuts in a food processor/blender until a flour forms. Then add in the almond flour, sugar, water and lemon juice and blend until a sold/sticky ball forms. Roll out into a slender log, wrap in plastic wrap and place in the freezer for at least 20 minutes (ideally 1 hour). Take out of the freezer and cut into small squares (as seen in the images above) – preparing for the chocolate sauce. Now on low heat, melt the bar of chocolate in a saucepan. Then drizzle the chocolate on top of the marzipan and leave it to set in the freezer (or enjoy immediately, like me ;). Store in the freezer for up to a few weeks and enjoy!
