Pumpkin Pie Chia Pudding
Pumpkin Pie Chia Pudding is a delicious and easy breakfast for this fall/winter season. Spice up your traditional chia pudding with pumpkin puree and a dollop of coconut yogurt. Pretty much a healthy dessert for breakfast.
It is late October. Already. I mean, is it just me or does it still feel like summers lingering in the air? Aside from those chilly nights and dark mornings, there is still a buzz running about, no? Maybe it's because San Francisco finally feels those few sacred days of warmth spread out over our two month Indian Summer, or maybe it's just the usual buzz of the approaching holiday season?...Well, which ever it is, I'm guessing there are a few of you out there, like me, who wait in anticipation for fall all-year-long and when it finally, finally, comes back around, it's half way gone and you still haven't made one damn pumpkin recipe yet (enter, hands-covering-eyes, monkey emoji). I'm with ya' on that.
So lets start off with an easy one, Pumpkin Pie Chia Pudding. If you could make an impromptu pumpkin pie and throw it in a jar for breakfast, than this is what you'd get - an absolutely delicious combination with just enough pumpkin puree to constitute it as fall-esque. Top it off with some coconut yogurt or cream and you indeed have yourself a 5 minute pumpkin pie in a cup.
Ok, now I gotta run because one of my girlfriends is in town and I promised her one of these and one of these and I haven't made either...yet.

Serves: 1-2
Prep Time: 5 minutes | Cook Time: Overnight
Ingredients for the Pumpkin Pie Chia Pudding:
- 1 cup almond milk
- 3 tablespoons chia seeds
- 1 huge tablespoon of pure pumpkin puree (nothing else added)
- 1 teaspoon vanilla powder
- 1-2 tablespoons maple syrup
- coconut yogurt and fruit for the topping
Instructions:
Mix the almond milk, chia seeds, maple syrup, pumpkin puree and vanilla in a small bowl, and let this sit overnight (or for at least 1 hour). Store in an airtight container (I used a mason jar), top with any fruit and the coconut yogurt, and take to work or university to enjoy!
