Breakfast To-Go: Stewed Cinnamon Apples in a Yogurt Parfait

Instagram Series: is a new series inspired by one of my daily Instagram (#8thandlake) photos of real life breakfasts/lunch and even dinners that are always made on the fly, quick and under 10 minutes (generally ;). And this is a delicious and nourishing Yogurt Parfait layered in Stewed Cinnamon Apples.

The inspiration of this section came from the pretty amazing support I’ve receieved from you all on instagram (#8thandlake). I can’t begin to express my deep gratitude and humility for each one of you, and especially for the genuine support for this blog, and the enthusiasm for the food I like to share. You really do know how to put a smile on my face each and every day :) 

And since my M.O. for the past 10 months on instagram, has been to share daily clips of my breakfast, lunch or dinners, I thought it would be a nice idea to actually share those recipes with you, in a little more detail. You guys are pretty cool in that you actually comment, asking for the recipes to these creations and since I’d like to give a little back, I’ll start featuring one recipe on Saturdays from my instagram that you guys have taken a liking to.

Now, finally, for the food...


Porridge, chia pudding and yogurt with berries are constants within my breakfast regimen. Although I rarely add anything new to this, I change out the fruits for seasonal picks. Nectarines blossom into apples while pomegranates fade into sweet summer berries. Yet this week I craved something different - something warm, light and flavorful. Specifically apples stewed in spices. This entire winter season I abandoned apples and oranges for the likes of pomegranates – my beloved pomegranates that always seem to bring the right kind of bursting sweetness to every meal. A fruit so versitle you could easily add them on top of salads as you could yogurt. But enough about pomegranates lets move back to this breakfast.

With winter comes a bounty of crisp apples and juicy oranges. Adding a few warming spices, like cinnamon and ginger, brings this breakfast full circle, all while creating a taste which envelopes the senses. Fruits simmering away in a cinnamon/ginger bath perfumes the house while enchanting the taste buds. I'll let your imagination run wild on the taste of this delicious pairing.

And because I know that we are all in some way pressed for time, an easy trick for an even quicker breakfast parfait is to make the stewed fruit the night before. It only takes 15 minutes and what you are left with is far better than what you would have missed out on – a yogurt filled with all the good stuff.

Serves: 2

Prep Time: 5 minutes | Cook Time: 12-15 minutes

Ingredients for the Stewed Cinnamon Apples in a Yogurt Parfait:

- 2 cups yogurt of choice (coconut if vegan)

For the Stewed Apples:

- 1 apple

- 1 pear

- juice of 1 orange

- splash of water

- 1 tablespoon coconut oil

- 1 teapsoon cinnamon

- 1/2 teaspoon ginger

- handful of raisins/currants

Instructions:

Simply chop the apple into bite-size cubes and toss into a small saucepan, along with the coconut oil, spices and orange juice, and warm on medium-high heat for 10 minutes - with the lid half way on. As this cooks, chop the pear into bite-size pieces and toss into the same saucepan to warm for another 5 minutes. Stir into your yogurt and enjoy!

I really hope you guys love this recipe! I was on a tasting high, to say the least, after making it this morning. I ate it, thought about it, and just made another batch for the weekend! I'm planning on layering it into my pancake mix (which I still have to share with you!) and then on top.
