Vanilla and Cashew Protein Smoothie

Arriving at my family’s home, I hear the chatter of familiar voices in the distance and the faint aroma of baked bread lingering past the double doors. My cousin opens the door and we make for an embrace that seems to last minutes because this is a cousin who I haven’t seen in a year - one who left to travel across expansive Australia and petite New Zealand last October. And I could not wait to hear of his journey. As my grandma cooks Easter dinner alongside us in the kitchen, the cousins and I pull up to the countertop stools to hear of Will’s wild adventures (and let me tell you there were a few). As sweet vegetables simmer on the nearby stove, homemade bread rolls rise in the oven, and our wine and champagne glasses were being tended to so well it's as if we never made a dent, it was evident that this was indeed a weekend of indulgences. Indulgences in conversations and in food.
But as with every holiday weekend, the indulgences finish as soon as they commence and we leave so perplexed as to how we consumed the amount of food as we did in a near 48 hours?! So as Monday comes around, I make this week one of nourishing indulgences - just as delicious as the weekend yet easier on the tummy. The day is spent in the kitchen, just as the weekend, making the staples that my bodies started to crave when I embarked on my own food journey a few years ago -- chia pudding, hummus, kale salads, almond milk, smoothies and more smoothies. And one such smoothie is this one right here.
Frozen bananas are creamed into a ‘nice-cream’ style and finished with a touch of vanilla from Organic Gemini’s Smoothie Mix. It’s a smoothie that mimics soft-serve yet has enough protein tucked inside to make a nourishing snack. An ideal smoothie post holiday blow out or not.

Ingredients for the Vanilla Protein Smoothie:
- 2 frozen bananas
- 1 - 1 & 1/2 cups almond milk (recipe here)
- 1 tablespoon cashew butter (optional but I love it)
- 1 tablespoon Organic Gemini Vanilla Smoothie Mix
- 1 tablespoon maca powder (optional)
Instructions:
Simply mix everything into a high-speed blender and mix until smooth and creamy.
