Morning Porridge with a Tahini, Maple and Vanilla Cream
A caramel dream bowl made from a delicious blend of tahini, maple syrup and vanilla! All stewed into a creamy coconut porridge. A filling breakfast made in 5 minutes.

Take a banana, pinch of cinnamon, some nut milk, oats, and there you have it – morning porridge. That’s usually how my mornings go on. Nothing too inventive on the kitchen table before 9am. Now I’m definitely not venturing to say that todays oatmeal recipe is nothing short of groundbreaking or that when you taste it, it sings to you the truth of life - most definitely not - but I did have to stop myself because I just hadn’t tasted anything like it before.
After postponing a trip to the market for the third day in a row, I scrambled through my cabinets to find anything I could stir into my oats. No cinnamon, banana or nut milk in sight. But in the corner of the fridge, hidden by half open jars of jam and unfinished juice bottles (should probably have saved them using my tip here), peeked a nearly finished jar of tahini. I reached for it and the maple syrup hiding right behind it, and stirred this into the cooked oats. Add a sprinkling of vanilla powder and there you have it – a morning porridge that tastes like a caramel dream bowl. I kid you not, the flavors and aromas from the mixing of those three simple ingredients mimics caramel. You will want to blend this holly trinity of ingredients into anything and everything possible. Now I must leave this space for the day so I can find new ways to use these three ingredients all before my best friend comes to visit in 3 hours.

Ingredients for the Tahini Porridge
- 2/3 cup rolled oats
- 1 cup water
- 1 cup coconut milk/nut milk or water (I used coconut)
- 1 tablespoon tahini
- 1 tablespoon maple syrup
- 1 teaspoon vanilla
Instructions:
On medium heat simply cook the oats, water and coconut milk. After about 5 minutes, when the oats have fully cooked, stir in the tahini, vanilla and maple syrup.
