One Pot Quinoa and Turmeric Stew
One Pot Quinoa Stew with hearty white beans, turmeric, kale and chili flakes. A quick weeknight meal made in only 30 minutes. Make it in bulk and bring with you to work or university.

I wanted to quickly pop in and share with you this delicious one-pot quinoa stew! It's been on my mind for months since I made it back in the winter and I finally had it again right before I left for Spain. It's hearty, delicious and a just a great meal to make whenever you're pressed for time. And the clean-up is a breeze - one pot and you're done. Now you can go outside and have even more time to enjoy the summer sun.

Prep Time: 10 minutes | Cook Time: 30 minutes
Ingredients for the Quinoa Stew:
- 3 big handfuls of chopped kale
- 2 cups of frozen peas
- 2 cans cannellini beans
- spiralize 1 sweet potato (optional)
- 4 garlic cloves
- 1 tablespoon coriander
- 1 tablspoon turmeric
- 1 teaspoon chili powder
- 1 can full fat coconut milk
- 1 can chopped tomatoes
- 1 & 1/2 cup quinoa
- 1 & 1/2 cup water
- juice of 1/2 lemon
- 1 tablespoon coconut oil
- sea salt
Instructions:
In a large pot on medium-high heat melt the coconut oil and then add the chopped garlic, all the spices and spiralized sweet potato to the pot. Let this warm for about 5 minutes. Then add the tomato can, coconut milk, quinoa, and 1 & 1/2 cups water to the pot. Bring to a boil and then bring down to a simmer. Cook for about 15 minutes and then add in the beans and peas. After another 15 minutes add the kale and lemon juice. Cook the kale until it wilts, add a little sea salt and then you’re done!
