Peanut Butter and Cinnamon Overnight Oats (Bircher Muesli)
Peanut Butter and Cinnamon Overnight Oats (Bircher Muesli) is a heart breakfast or snack that you can make in bulk and take with you as you walk out the door for work or university.
These are my favorite recipes to share - ones that I never intended to post and didn’t think too much of. Unaware that you guys wanted a recipe like this and after receiving many emails asking for the recipe, it made for a welcomed post to share with you today and here it is – extremely simple and a great gateway meal for ‘breakfasts on the go’ or anything ‘overnight’.
Creamy peanut butter (or really any nut butter) absorbs into the oats and adds a filling layer to this particular birch muesli. Make a few in advance and pop them into the fridge to set. Come morning you won't have to rush because breakfast is already there, waiting for you. Not much is better than that.

Prep Time: 5 minutes | Cook Time: Overnight or at least 1 hour
Ingredients for the Peanut Butter and Cinnamon Overnight Oats (Bircher Muesli):
- 1 cup nut milk (use any you'd like)
- 1/2 ripe banana
- 1/2 cup rolled oats
- 3 tablespoons chia seeds
- 1 tablespoon honey (or maple syrup)
- 1 huge tablespoon of peanut butter
- 1 teaspoon cinnamon
- 1 teaspoon vanilla powder
- 1 peach
- handful of granola - I used this recipe
Instructions:
In a serving bowl filled with the nut milk and honey, simply mash the banana with a fork, and add the oats, chia seeds, peanut butter, cinnamon, vanilla and mix well. Place a cover over the muesli and store in the refrigerator for at least 1 hour or till overnight. When you're ready to eat, top with slices of peaches and granola. Enjoy this hearty breakfast!
