Chocolate-Gingersnap Fall Bars
Winter spiced Chocolate-Gingersnap Bars perfect for the holiday season. A healthy granola bar filled with chunks of hazelnuts, pumpkin seeds and pecans, and seasoned with holiday spices.
I've got to say -- I think this has been the most highly requested recipe from my Instagram page! You guys seem to love your chocolatey bars! And I'm right there with ya. I wanted to bring you a bar that's simple to make, stays hard and doesn't crumble into a million pieces ( been there, done that...way too many times) and is packed with nutrition from the trifecta of nuts - hazelnuts, pecans and pumpkin seeds.
Now these chocolate bars are delicious just as, but you're getting a two-for-one here -- add in some holiday spices for a seasonal chocolate + nut bar! And since I've got your back, wrap these sweet bars up as holiday gifts! I mean, I would be feeling pretty lucky if one of my friends brought me homemade Chocolate-Gingersnap Bars :)

For the Chocolate-Gingersnap Bars
Serves: 10-12 bars
Prep Time: 5 minutes | Cook Time: 1 hour in freezer
Ingredients for the bars:
1 & 1/4 cup medjool dates, pitted
1/2 cup + 1 tablespoon cacao powder
1/2 cup + 2 tablespoons cup coconut oil, melted
1 cup pumpkin seeds
1 cup hazelnuts
1 cup pecans
Ingredients for the gingersnap spice mix:
3/4 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon all spice
1/4 teaspoon nutmeg
sea salt
Instructions:
First add the coconut oil, cacao and dates into the food processor and blend until well combined, about 1 minute. Then add in the nuts, seeds and spices, and pulse until they are mixed into the batter, but still remain crunchy. Now pour the batter onto a lined baking pan ( I used a 8x8 pan). Press the batter into the pan - keeping the bars in 3/4 inch thick pieces - and sprinkle the top with extra nuts and seeds. Store the bars in the freezer for an hour. Cut them into squares and enjoy! I like to store mine in the freezer or fridge to stay cool.
