Grilled Sweet Pepper Pizza with Caramelized Onion and Goat Cheese

I had a hard time keeping this recipe from you because, guys, it is outrageously delicious! I am thrilled to partner with my friends @SunsetGrown (I’ve been cooking with their produce my entire life!) to create this beautiful spring pizza! And the star of the show are these Wild Wonder Peppers! I’ve never had a pepper like this before - they are SWEET and pair beautifully with the tomatoes, goat cheese and caramelized onions. You will be in pizza heaven with this little number, especially if you love grilling! 

Grilling makes the skin of the peppers so tender and is a great way to release their sweet juices, and who doesn’t like the subtle richness of charred veggies that comes from the grill! It’s absolutely fantastic. And if you have never grilled peppers before or never experienced them on pizza, well here is your permission to go wild. Makes: 5-6 slices 

1 (22oz) pre-made pizza dough 

1 @SunsetGrown Wild Wonders Peppers 

1 tbsp olive or avocado oil

1 medium yellow onion, cut into thin half moons

1 ( 4oz) goat cheese or any soft vegan cheese

Handful of @SunsetGrown Wild Wonders Tomatoes

Handful fresh basil

Sprinkle of hemp seeds, optional

Sea salt

Start by preheating your oven to the temperature on your pizza dough packet and follow the instructions on how to roll out the dough. While the oven is preheating, grill your peppers. Place your peppers on a medium-hot grill pan or grill, and cook for 5 minutes on each side, until the peppers have soften and you have beautiful charred grill marks. Remove the peppers from the heat and slice each pepper into thin strips and set aside while you make your caramelized onions. 

In a medium size pan on high heat, add a tablespoon of oil and warm for 1 minute. Now add in the onion slices and generous pinch of sea salt. Cook on medium for 15-20 minutes, or until the onions have soften and caramelized, stirring frequently. Set aside as you cook your pizza.

Once the pizza dough has cooked through, evenly smear the goat cheese all over the top of the pizza, add the caramelized onions, then the grilled pepper, slices of cherry tomatoes, sprinkle of hemp seeds, and a handful of fresh basil. Cut into pieces and enjoy!
