Simple Overnight Bircher Muesli
Overnight Bircher Muesli is one of my favorite breakfasts, as it is so hearty and easy to make! It is a simple recipe but with the addition of mashing the berries and banana it helps to release their juices, infusing the muesli with a wonderful sweet flavor. I have a strong affinity for breakfast and I’ve quickly become addicted to this one! I’ll eat this specific muesli for weeks at a time and then switch it up to another delicious breakfast and then come back to this once again. Trust me, this recipe is so unbelievably good and very easy, you’ll be craving it every morning too!
The beauty in this breakfast is that you prepare it at night and overnight the oats break down (becoming easier for you to digest) and absorb all the sweet juices and cashew milk, which blend into a creamy and hearty breakfast! This really is a great option for someone who is not a morning person or if you are short on time. It can be such a relief to wake up knowing that a beautiful and hearty breakfast is already waiting for you. It’s also very portable and if you keep it in a container with a small ice pack, you can easily bring it to work or university and have it as a filling lunch, possibly alongside a few energy bites. Toppings for smoothie bowls, oatmeal, muesli and salads always make me extremely excited! I love adding raw cacao nibs, coconut shreds, fresh fruit and mulberries but feel free to be creative and add anything you desire!
As much as this muesli is delicious it is just as healthy, providing you with many energy giving vitamins and minerals from the fruit, oats and cashew milk! I can’t get enough of cashew milk as it is creamier than almond milk and has a natural sweet after note. It is also a great source of vitamin K, which is a component of many proteins that work to build strong bones. It also has iron, which is needed to carry oxygen within red blood cells. More oxygen flow from the iron will increase your energy and keep you better fueled throughout the day!

Ingredients for the Overnight Bircher Muesli:
- 1 cup homemade cashew milk (or any nut milk)
- 3/4 cup raspberries (or any berry)
- 1/2 ripe banana
- 3/4 cup rolled oats
- 1 tablespoon raw honey
- small handful of raw cacao nibs
Instructions:
In a serving bowl filled with the cashew milk and honey, simply mash the raspberries and bananas with a fork, releasing all their juices. Then add the oats and raw cacao nibs and mix well. Place a cover over the muesli and store in the refrigerator for at least 30 minutes or till overnight. Enjoy this hearty breakfast!
