The Best Raspberry Chia Seed Jam on Almond Butter Toast
The last couple of weeks have been really busy which is why there has been an abundance of super speedy meals and snacks added lately! I’ve been making easy meals and snacks in bulk so that I always have something delicious on hand. Anyone who knows me knows that I snack throughout most of the day, so this is why I love experimenting with jam - in order to make a healthy peanut butter and jelly sandwich! This raspberry jam is extremely easy to make and uses only 3 ingredients! I used fresh raspberries but you could just as easily use frozen and have them thawed. Then you drizzle in sweet honey and chia seeds. The chia seeds add a lovely crunch to the jam, reminiscent of the raspberry seeds, while thickening the mixture. I couldn’t be happier with how delicious it came out! It has a great sweetness from the fruit and fresh honey and a wonderful thick texture, exactly like homemade jam - it is perfect! My go-to-way of enjoying this is to spread a thick layer of creamy almond butter on toast (I used gluten-free) and a dollop of this delicious raspberry jam. You have to try this, it really makes for a scrumptious spread on toast, scones, pancakes or mixed into oatmeal. So delicious! Not only is this an incredibly easy jam recipe that only takes 15 minutes, it is such a healthy alternative to the expensive jams sold at grocery stores that are filled with corn syrup and other nasty ingredients that only hurt our bodies.
The great thing about this jam is that it uses chia seeds to thicken the mixture! Chia seeds have a very special ability to expand 12 times their weight in liquid – this allows us to stay full as it expands in our stomachs. Chia seeds are also a wonderful source of fiber as 2 tablespoons gives 10g of fiber, nearly half of your daily requirement! Fiber is one of the most important elements in your diet as it is the main way of excreting waste and toxins from you body, so its important to eat around 25-35g of fiber each day.

Ingredients for the Raspberry Chia Jam:
- 2 cups raspberries (or frozen but thawed)
- 1 cup strawberries (or frozen but thawed)
- 2 ½ tablespoons chia seeds
- 3 tablespoons honey
Instructions:
Simply start by cutting the strawberries in half. Add the strawberries, raspberries and honey to a saucepan and simmer for 10 minutes on medium-low heat. Mash the fruit as it simmers, but leave a few pieces whole for texture in the jam. Allow the mixture to thicken and reduce down. After 10 minutes, add the chia seeds, mix well and simmer for another 10 minutes. Once the jam has thickened to your likely, remove and seal in an airtight container ( I used a mason jar). Enjoy this jam on a piece of toast with almond butter for a very delicious and quick snack!
