One Pot Pasta Arrabiata

One Pot Pasta Arrabiata is the easiest dinner recipe, using only one pot. Perfect for a quick weeknight meal. Spicy pasta is tossed with roasted tomatoes and fresh basil.

Today is August 3, not June 3, or July 3, but, end-of-the-summer, August 3. I look back and there hasn’t been a summer quite like this. It truly blows my mind how quickly summer has come and passed, and there has only been 3 days of sun in San Francisco (and one of those days I accidentally burned my leg to the point where my nickname for a week was, lobster – oh the irony). Which is why I’m grateful that I was mostly gone and in sunnier places this summer. But as summer fades and fall commences, here is one last summer meal for you. One filled with all of summer's glory – a spicy pasta arrabiata – fresh tomatoes, basil and a pasta recipe that only takes 15 minutes to make with only one bowl to clean up.  A quickie to get you out of the kitchen and into the sun…that is if you’re anywhere remotely outside of San Francisco.

Serves: 4-6 bowls

Prep Time: 5 minutes | Cook Time: 10 minutes

Ingredients for the One Pot Pasta Arrabiata:

- 2 cups pasta of your choice (I used gluten-free spaghetti) 

-2 &1/4 cups water

- 2 thinly sliced garlic cloves

- 1/2 small red onion

- 1 can 14oz diced tomatoes

- handful of fresh or roasted tomatoes (add the roasted tomatoes on top once pasta is finished)

- 1 & 1/2 teaspoons tomato paste

- 3 -4 tablespoons nutritional yeast (optional - use parmesan cheese if you'd like)

- 1 teaspoon chili flakes

- 1 small teaspoon dried oregano

- 1 teaspoon sea salt

- handful fresh basil

- drizzle of olive oil

Instructions:

In a very large saucepan or a large pot, heat the olive oil on medium. Then add the thinly sliced onion and garlic, the chili flakes, salt, tomato paste and oregano, and sauté for a few minutes while you assemble the rest of the ingredients. Then pour in the water, canned tomatoes, nutritional yeast, dried pasta and let this cook on medium-high heat until the water has been absorbed and the pasta is cooked al dente. Don't forget to stir every minute or so. Top with basil and a squeeze of lemon juice, and enjoy!
