Tender Roasted Salmon with A Blueberry Glaze

Happy Father’s Day everyone! And man do I have a fun recipe and video for you today! Because my dad is actually here in the kitchen cooking with us! He is a master butcher (for over 30 years!), and is here to show us how to cook the most tender salmon ever. And I’m here to teach him how to create a delicious and simple blueberry-blackberry glaze sauce that goes perfectly atop the salmon!
I love that we’re using our favorite California Giant Berries in this recipes and showcasing how you can absolutely use these berries in savory recipes - they actually balance out the savory element by providing a touch of sweetness, and in this case, also a touch of tang. Serves: 3-4
For the Salmon:
2 large salmon fillets
1 tbsp olive oil
Sea salt
For the Glaze:
1 & 1/2 cup mix of fresh California Giant blueberries and blackberries
1 tbsp coconut sugar
1 tbsp balsamic vinegar
Juice of 1 lemon and zest of 1/2 lemon
Optional:
Handful of greens
Radish slices
Preheat the oven to 400F. On a parchment paper lined baking tray, coat the salmon in olive oil and sprinkle with sea salt. Cook for about 10-12 minutes, or until your salmon is tender.
In the meantime, add all the glaze ingredients into a pot and bring to a boil, then lower to a simmer, and stew for about 10-15 minutes. Smash down the berries as it cooks along.
Place the salmon on top of a bed of greens and pour the sauce on top. Add a few radish slices and enjoy!
