Dark Chocolate Bars with a Blueberry-Tahini Swirl

Learn How To Make the most delicious, rich homemade dark chocolate! And it even is mixed with the most gorgeous blueberry jam-tahini swirl! This dessert is decadent and Comes Together In 15 Minutes! It is naturally vegan and gluten free.

I think you guys know by now that there is not a single night that goes by that I don’t have chocolate in some kind of form - whether that be hot chocolate, chocolate bars, chocolate muffins, and if I’m desperate I’ll make a batch of chia seed pudding, add in cacao powder and wait till it’s ready because I need my fix…I consider it a form of self-care ;)

So, today we’re making chocolate 2.0, from scratch! A decadent dark chocolate that is boosted with antioxidant rich blueberries! And we’re topping it off with a luscious swirl of creamy tahini…HEAVEN. 

And we have to use my all time favorite California Giant Berries blueberries! They’re so fresh and burst with sweetness when you stew them down into a loose ‘chia seed jam’ before swirling them into the chocolate with the tahini. This is one hell of a trifecta of flavors - chocolatey, fruity and nutty…I mean, you guys have to just try this chocolate to believe how good it is! I ended up making a second batch the very next day because we ate nearly the whole thing during the filming of this video! Just too good :)

Dark-Chocolate-Tahini
3-Dark-Chocolate-Tahini

Makes: 12 Slices

Ingredients for the Jam:

2 cups California Giant Blueberries

1 tbsp chia seeds

Splash of water

1 tbsp maple syrup

Ingredients for the Chocolate:

1 Cup Cacao Butter

1 & 1/4 Cup Cacao Powder

1/4 - 1/2 Cup Maple Syrup (I like my chocolate more intense and rich, less sweet, so I use 1/4 cup)

Pinch Sea Salt

2 tbsp tahini

Instructions: 

For The Jam, Add The Blueberries And Maple To A Saucepan And Simmer For 5-10 Minutes On Medium-Low Heat.  Mash The Fruit As It Simmers, But Leave A Few Pieces Whole For Texture In The Jam.  Add A Splash Of Water If Needed. Allow The Mixture To Thicken And Reduce Down.  Now Add The Chia Seeds And Mix Well. Set Aside.

For The Chocolate, Fill A Small Saucepan With 1/2 Cup Of Water And Place A Bowl On Top, Covering The Saucepan. Once The Bowl Is Hot And The Water Below Is Boiling, Melt The Cacao Butter Inside The Bowl. Once It Has Melted Stir In The Cacao Powder And Maple Syrup For A Few Minutes Until The Chocolate Thickens. Pour Into A Lined Baking Sheet, Spread Evenly. Top With All The Blueberry Jam and Tahini And Swirl The Two Into The Chocolate Creating a Beautiful/Messy Design. Leave It To Set In The Freezer For 20 Minutes Or So. Once Set, Cut Into Bars And Store In The Refrigerator Or Freezer. Enjoy!
