White Bean and Lentil Garden Salad with Campari Tomatoes

This delicious White Bean and Lentil Garden Salad with Campari Tomatoes is abundance in food form. It comes together in less than 20 minutes for a crunchy, flavorful recipe that is naturally gluten-free and vegan.

I love a hearty salad, and one that is loaded with so much goodness, that it becomes a full meal all in its own right - no need for anything extra :)

And that is this salad. Delicate white beans and lentils, are mixed with fresh herbs and juicy Campari tomatoes, and tossed in a maple tahini vinaigrette.

Abundant White Bean and Lentil Garden Salad with Campari Tomatoes

Serves 2-3

For the salad:

2 cups brown lentils, cooked 

1 cup butter beans, drained and rinsed 

4-6 SUNSET Campari® Tomatoes, quartered 

1 cup SUNSET ONE SWEET® Cucumbers, quartered  

1 carrot, peeled roughly chopped 

1 red bell pepper, roughly chopped (seeds removed)

1/4 cup almonds, roughly chopped 

1/2 shallot, roughly chopped 

1/3 cup Parmesan cheese or vegan Parmesan, shavings 

Handful fresh cilantro 

Handful fresh dill


Maple-Tahini Vinaigrette dressing: 

4 tbsp olive oil

2 tbsp tahini 

2 tbsp maple 

4-5 tbsp red wine vinegar 

Pinch of sea salt 

Add all the salad ingredients into a large mixing bowl. 

In a smaller bowl, whisk the dressing ingredients. 

Now pour the dressing over the salad and toss to combine. Plate and enjoy!
