The Ultimate Spring Mediterranean Quinoa and Berry Salad

This Delicious Spring Mediterranean Quinoa and Berry Salad is packed with flavor and textures from the sun-dried tomatoes, sweet berries and a two-ingredient simple dressing that transforms the recipe! This healthy salad Is Made Vegan And Gluten-Free.

I love a fresh recipe, and one that is so good it has a way of transporting you right back to a place and time. For me this salad, filled with juicy kalamata olives, sun-dried tomatoes, goat cheese, fluffy quinoa and pops of fresh berries, brings me right back to the Mediterranean coastline. It is the ultimate Mediterranean salad with the simplest dressing. Only two ingredients transform the texture of this salad into a creamy, hearty affair…Hummus + balsamic vinegar. Yup, that is it. Nothing to overthink, nothing extra to do. Just add and mix, and seconds later you have a heartier, more filling salad that is now ultra creamy and delicious. 

 

Last year I created a decadent blueberry-hummus recipe video with California Giant Berries (you can find that recipe here on the blog or on Instagram too!), which is where I got the idea for adding their juicy berries into this salad!

Ultimate Mediterranean Quinoa and Berry Salad

Serves 2

 

1/3 cup California Giant Berries Strawberries 

1/3 cup California Giant Berries Raspberries

1/3 cup California Giant Berries Blueberries  

1 cucumber, peeled and sliced

4 cups mixed greens and butter lettuce

1/2 cup white quinoa, cooked

1/4 cup sun-dried tomatoes, roughly chopped

1/4 cup goat cheese or vegan goat cheese

1 avocado, cubed 

1/4 cup kalamata olives

3-4 tbsp hummus

3-4 tbsp balsamic vinaigrette 

 

Add all the ingredients into a bowl and mix to combine. Make sure the hummus is thoroughly mixed into the salad, leaving no clumps. This is what creates the creamy texture of the salad. Serve and enjoy!
