Slow Roasted Tomato Hummus Plate

This Slow Roasted Tomato Hummus Plate is a delicious addition to any festive party or weeknight dinner at home. It is naturally gluten-free and can be eaten as a dip, a spread, or even mixed into salad as a creamy, rich dressing.

I know we all love a good shake up over here, so today we’re elevating the flavor of the beloved classic hummus with the most stunning blend of slow roasted tomatoes and sweet garlic. 

 

I have created so many variations of hummus over the years that it almost feels like a pastime! 

The making of hummus is inherently playful - you get the chance to add new flavors to the base and create something unique every single time. And you end up feeling like an innovative chef in the process!

 

And this hummus right here is loaded with all the good stuff… 

 

I’ve been playing around with Sunset’s Angel Sweet Tomatoes for years and I just adore how these smaller, almost cherry like sized, tomatoes roast down in the oven in no time, and as they do, they release a sweet delicate aroma. Pair that with the roasted garlic and you got yourself a gorgeously unexpected slow-roasted tomato-garlic hummus. 

 

By elevating your hummus plate with crunchy veggies, crispy chickpeas, smooth slow roasted tomato hummus and toasted pita, you have a feast for the eyes and for the senses… 

 

Just wait until you dip that pita in, swirling up a scoop of all this goodness, you’ll end up wanting to recreate this hummus every chance you get. 

And I don’t see the problem with that ;)

Slow Roasted Garlic Tomatoes:

1 pint Sunset Angel Sweet Tomatoes

1/2 whole garlic clove, roasted 

1 tbsp olive oil

Pinch of sea salt 

Pinch of chili flakes

Hummus:

1 can butter beans, rinsed and strained

1/2 cup tahini 

Juice of 1 lemon 

Pinch of sea salt 

1/2 cup of the slow roasted garlic tomatoes 

2 tbsp olive oil 

Serve with any of the below:

Sliced Sunset cucumber 

Sliced Sunset bell peppers

Toasted pita or bread 

Olives

Pickled onions 

Crispy chickpeas

Fresh herbs 

Start by preheating your oven to 415F. Add all the slow roasted tomato ingredients into a baking dish and roast for 25 minutes, or until the tomatoes have blistered and released their juices. 

In a food processor, add all the hummus ingredients (including the majority of the roasted tomatoes - about 1 cup) and blend until creamy. Save the rest of the tomatoes for topping.

Pour the hummus onto a large serving plate, top with the rest of the roasted tomatoes, and add your serving snacks, such as, slices of cucumbers, bell peppers, pita bread, olives, crispy chickpeas, and anything else you’d like. Enjoy!
