Veggie Packed Salmon Wrap with Quick Pickled Berries! 

This is THE salmon wrap that I have been obsessing over for the last 5 months! You know the one that makes an appearance on my IG Stories multiple times a week.

And since this wrap is made by a local grocery store, I figured I’d make it from scratch so that you and I can enjoy it whenever the hell we want! 

And once you see how easy it is to make, I just know it’s quickly going to become your newest foodie obsession ;)

We’re elevating this classic wrap by whipping the salmon together with homemade pickled berries, adding an unexpected punch of flavor.

For the quick pickling we have a mix of all types of California Giant Berries. Each berry adds a tangy-sweetness to the experience. And best of all, you get to use the rest of the pickled berries as a delicious topping for other recipes like your next salad, on top of toast or on grilled seafood…the possibilities are endless ❤️

Crunchy veggies, tender whipped salmon, pickled onions and berries, all wrapped in a soft tortilla just waiting for you to devour…

Veggie Packed Salmon Wrap with Pickled Berries

Serves 1

For the Quick Pickled Berries and Onions:

1/4 large red onion, thinly sliced into half moon half

1/2 cup mixed of any California Giant Berries

1/2 cup apple cider vinegar

1/4 cup water

1 tsp sea salt

1 tbsp maple or honey

For the Salmon Wrap:

1/3 cup cabbage, shredded

1/3 cup carrots, shredded

2-3 strips of thinly sliced cucumber

1 cup salmon, cooked and shredded

1 green tortilla wrap

handful of cilantro

Sea salt

Start by making the pickled berries and onions. Add everything into a jar, seal, and pop into the fridge to store - it will be ready within 1 hour.

In the meantime, make the salmon wrap by assembling the ingredients. Lay the tortilla wrap down, and to the center of the wrap, add the shredded salmon - be sure to leave a 1” border from the top and bottom of the tortilla wrap. Next, layer onto of the salmon the cabbage, carrots, cucumber slices, cilantro and dash of sea salt.

Wrap the tortilla like a burrito - folding the bottom, the top and then both sides (see video for full detail) and enjoy!
