The only thing better than Mac n’ Cheese is truly when you make it with cheese stuffed tortellini and turn it into a pink sauce!

Tortellini Mac n’ Cheese
1 (10oz) package of tortellini
3 tbsp butter
3 cloves of garlic, minced
1 & 1/2 cups Sunset Campari Tomatoes, diced
1/2 cup milk
1/4 cup heavy cream
1 & 1/2 cups cheddar cheese
1 cup parmesan cheese
Fresh basil
Sea salt
Start by cooking the tortellini as the box instructs. Once it’s ready, strain and add the pasta back into the bowl and drizzle with a little olive oil (to prevent the tortellini from sticking) and mix well.
Melt the butter in a separate pan on medium heat. Add in the garlic, pinch of sea salt, and cook until fragrant, 1-2 minutes.
Next, add in the diced tomatoes and a pinch of sea salt, cooking the tomatoes for about 5-7 minutes. Bring this sauce to a simmer and pour in the milk and cream. Mix well. Then add all the cheeses. Mix again and then add in your tortellini. Let this all cook for a few minutes together to combine.
Serve in bowls and top with more parmesan cheese and fresh basil. Enjoy!
