Salmon, Tomato and Feta Tray Bake
Serves 2
1 pound wild caught salmon, cut into chunks
1/2 cup feta cheese block, cut into chunks
3 Sunset Grown Kumato® Tomatoes, cut in half
3 tablespoons extra virgin olive oil
Sea salt
Black pepper
1/2 teaspoon crushed red chili pepper
Juice of 1/2 lemon
*handful fresh parsley as topping
Start by preheating your oven to 400F. Add all the ingredients into a baking dish - placing the tomatoes cut side up. Drizzle the olive oil, sprinkle sea salt, pepper, chili flakes and lemon juice all over the ingredients. Bake for 15 minutes or until the tomatoes have softened and salmon is cooked through. Top with fresh parsley and enjoy.
