Nourish Bowl with a Raspberry-Romesco Salad Dressing

Nourish Bowl with a Raspberry-Romesco Sauce is an effortless salad that is as loaded with veggies as it is loaded with flavor. Romesco sauce is reimagined as a salad dressing, creating a decadent salad. This recipe is naturally gluten-free and vegan.

Romesco is one of my all time favorite savory spreads. It’s a Spanish spread that is typically used on veggies, seafood and meat. Yet, I was curious to see if the classical romesco spread could be transformed into a sweet salad dressing.

And all I have is one word…

D-E-L-E-C-T-A-B-L-E.

It’s hearty, packs a flavor punch and turns a humble salad into a gorgeous rainbow in a bowl. And the secret ingredient to transforming this unique romesco are the California Giant Raspberries!

By simply adding in the most delicious California Giant Raspberries, it effortlessly ups the sweet/tartness of the dressing, and creates an element of surprise, playfulness, and, of course, deliciousness that keeps us coming back for more.

And this was actually a recipe that I questioned if it could work.

Could you really transform romesco sauce into a sweet salad dressing? But when I had my first bite, I was shocked! Literally, I gasped.

It not only ‘works’ but this dressing pulls the whole salad together! It’s a hearty dressing that elevates the flavors and has a way of clinging to each ingredient, coating it in a tangy-sweetness. It is the perfect salad to celebrate the end of summer…and then the perfect dressing to incorporate in your up-coming hearty fall/winter bowls :)

Nourish Bowl with a Raspberry-Romesco Sauce:

Serves 1 

For the Romesco:

2 roasted red bell peppers

1 clove garlic 

1/3 cup California Giant Berries Raspberries

1/2 cup toasted cashews 

1 tablespoons white wine vinegar 

1 tablespoons olive oil 

Pinch of paprika 

Sea salt 

Plate with:

1/2 cup shredded cabbage/carrot mixture or coleslaw

1/2 cup cooked quinoa or any grain 

1/2 avocado 

1 cup kale or any greens

Top with:

Sprinkle of feta or vegan feta

Watermelon radish slices

Edible flowers

Extra California Giant Berries Raspberries

To make the romesco, add everything into a food processor and blend till creamy. Pour into a bowl and set aside. 

To build your nourish bowl, in sections, add in the shredded cabbage, quinoa, avocado and greens. Add the romesco sauce in the middle and top with the extra toppings. When it’s ready to enjoy, mix the romesco with the rest of the ingredients in the bowl and enjoy it as a dressing.
