Vanilla and Cinnamon Waffles

Fluffy waffles with a pinch of cinnamon, vanilla, and maple syrup makes for an ideal healthy weekend treat, especially during brunch with friends and family. Turn these delicious waffles into pancakes too - it's up to you :)

Strolling through the sleepy streets of DC in the early a.m., I find myself not marveling at the architectural beauty of the brownstone homes, but instead, fixated on a very primal desire - hunger. And not just hunger as is but for hunger for waffles. Fluffy, airy, light as a cloud, waffles. You know the kind – the ones that are triumphantly pilled high with seasonal fruits and a heavy drizzle of maple syrup. So I pulled out my phone and not to my surprise, my phone was near dead with 10 percent left to go. So I opted out of my waffle shop hunt, and instead, landed in a Greek restaurant. A plate of homemade hummus and butter beans were a nice second but were no waffles. I let go of this waffle fixation for the rest of the trip but only because I had two days left and knew I’d kidnap my family’s waffle iron when I got home.

And I did just that. I borrowed my family’s 30-year-old waffle iron and made a batch. And it turned out…horrible. The promising batter now stuck to every crevasse, burning into an inedible crust. Yet, I didn’t let this mishap get the best of me. Yes, waffles were out again, but pancakes were not. Needless to say, these waffles are not from that iron. But happy to say that Amazon sells waffle irons for less than $30. So two days later, thanks to Amazon Prime, I got my waffle fix.

Serves: 3-4 waffles

Prep Time: 5 minutes | Cool Time: 5 minutes

Ingredients for the Waffles:

-1 & 1/2 cup spelt flour (or buckwheat if GF)

- 1 tablespoon baking powder

- 1 egg (1 flax egg if vegan)

- 1 cup almond milk

- 2 tablespoons maple syrup

- 1 tablespoon cinnamon

- 1 teaspoon vanilla powder

- 1 tablespoon melted coconut oil

Instructions:

Simply mix all the dry ingredients into a large bowl. Then slowly whisk in the almond milk, egg, and maple syrup until you get the right consistency – we’re looking for a thicker batter (if you’re making pancakes, add more milk to thin the batter out). If your iron is not non-stick then add a little coconut oil to your waffle iron before you turn it on. Then add the batter and heat until ready. Top with anything you’d like!
