Vanilla Cashew Chia Pudding
A quick breakfast made in under 5 minutes - vanilla chia pudding with a dollop of hearty cashew butter makes for a filling breakfast or snack on the go.

Rewind to last Saturday morning where I shared a shorter post since my forth generation iPhone died in the night and I woke up late. Now it's one week later and the same thing happened yet again. I think it's safe to say that one of my priorities this weekend should be to get a new phone - one that can hold a battery for longer than it takes to make this breakfast.
Oh and since we're speaking of breakfast, I wanted to share this delicious Vanilla Chia Pudding seeing as you guys went a little nuts over it on Instagram a few weeks ago - and that just makes me all sorts of happy.
I'm glad that we can share in the beautiful versatility of chia seeds, once a garden/plant staple in the early 1990's and now a major contender in the healthy breakfast scene. What a great evolution chia seeds have had. And now as I write this, just as last week, it's in real time. And as I peak out the sunlit window I see that it is warm, heating to the 70s. And I'd like to get out there and enjoy that beautiful weekend sunshine - so I'll be taking this chia pudding to go :)

Serves: 2
Prep Time: 2 minutes | Cook Time: 2 minutes
Ingredients for the Vanilla Chia Pudding:
- 6 tablespoons chia seeds
- 1 ripe banana
- 2 cups almond milk (recipe here)
- 1-2 tablespoon cashew butter (optional but I love it - recipe here)
- 1 - 2 tablespoons honey
- 1 teaspoon vanilla powder
Instructions:
After making your almond milk, mix in the chia seeds, honey, cashew butter, mashed banana and vanilla. Let this sit overnight (or for at least 3 hours). Store in an airtight container (I use a mason jar), top with any fruit, and take to work or university to enjoy!
