Savory Valentine's Day Picnic Spread: Edamame and Cashew Crunch Salad
A Valentine's Day feast with a delicious crunchy cashew and grilled edamame salad topped with a sweet sesame-honey dressing. A little savory spread before the sweets...
Remember back when you were a kid and Valentine's Day was an afternoon in school where everyone ate cupcakes, cookies and chocolate, and collected secret admirer notes? I don’t know about you, but I’ll happily celebrate a holiday that calls for chocolates and truffles, and to shower your loved ones in appreciation. Even in past years, single or not, when February 14th rolls around I’d find time to treat myself to chocolate and dinner with friends. And that’s exactly what I’ll be doing this year – taking some time over the weekend for a picnic celebration! Maybe not even a Valentine's Day celebration, but rather a relaxing afternoon spent with loved ones nibbling on chocolate, freshly baked bread, and a big ole salad (I mean, I have to offset all the chocolate from the day). It doesn’t have to be fancy and it doesn’t even have to be planned. Just call up a friend, pack away a few treats and a main (I’ll be bringing Taylor Farms Edamame Asian Crunch Salad Kit along!) and you’re good to go! However you celebrate it, enjoy tomorrow as a way to turn outward and to celebrate all the people that bring you joy.
About the Dish:
In celebration of Valentine’s Day, I’ve partnered with Taylor Farms to bring you this NEW delicious Edamame Asian Crunch Salad, as part of their NEW line of Crafted Kits! Crunchy bites of cashews and grilled edamame are tossed with creamy avocado and apple slices. Drizzle with their sweet sesame-honey dressing and you’ve got yourself a picnic salad that just came together in minutes!
It’s a salad fit for your lifestyle anytime, anywhere. By first arming you with select wholesome toppings and a delicious dressing, this salad kit makes healthy eating approachable and sustainable. Adapt the salad to please your taste buds and top it off with any extra garnishes that you love. I’m a fan of adding in avocado and radish slices, hemp seeds, quinoa, mushrooms or even baked salmon.
