Remember back when you were a kid and Valentine's Day was an afternoon in school where everyone ate cupcakes, cookies and chocolate, and collected secret admirer notes? I don’t know about you, but I’ll happily celebrate a holiday that calls for chocolates and truffles, and to shower your loved ones in appreciation. Even in past years, single or not, when February 14th rolls around I’d find time to treat myself to chocolate and dinner with friends. And that’s exactly what I’ll be doing this year – taking some time over the weekend for a picnic celebration! Maybe not even a Valentine's Day celebration, but rather a relaxing afternoon spent with loved ones nibbling on chocolate, freshly baked bread, and a big ole salad (I mean, I have to offset all the chocolate from the day). It doesn’t have to be fancy and it doesn’t even have to be planned. Just call up a friend, pack away a few treats and a main (I’ll be bringing Taylor Farms Edamame Asian Crunch Salad Kit along!) and you’re good to go! However you celebrate it, enjoy tomorrow as a way to turn outward and to celebrate all the people that bring you joy.

For the Edamame Crunch Salad

Serves: 2

Prep Time: 5 minutes | Cook Time: 5 minutes

For the salad:

1 packet of Taylor Farms Edamame Crunch Salad, plus dressing

1 avocado, cubed

1/2 carrot, thinly sliced

handful of hemp seeds

1/2 red apple, thinly sliced (optional)

Instructions:

To make the salad, simply mix all the ingredients together with the dressing from the Taylor Farms Salad Kit and separate into two bowls. Enjoy!
