Tomato and Burrata Slider

A jam packed Italian style panino slider made delicious with grilled tomatoes, mortadella and burrata cheese.

Since I got back from Italy, I have not been able to stop thinking about this panino!

It has occupied my mind like no other. I mean, the way the creamy burrata oozes out, enveloping the sandwich…pure perfection. 🤤

I knew I had to come home and recreate it…but with a twist.

When grilled, the tomatoes burst with a juicy sweetness that melds into the burrata creating the most heaven sent bite 💫

I honestly can’t get enough of these little guys and I have a feeling you won’t either 😉

Tomato-Burrata Sliders

Makes 8 Sliders 

1 large slice of focaccia, cut lengthwise in half  

Handful arugula

6 slices of mortadella 

1 burrata ball

1/2 cup mixed @sunsetgrown Sugar Bomb and/or Flavor Bomb Tomatoes, cut in half

Drizzle of olive oil 

Handful pistachios, roughly chopped

Sea salt 


Start by grilling your tomatoes on a grill pan with a drizzle of olive oil over medium-high heat. Grill cut side down for 3 minutes. Remove when you see grill marks and set aside. 

Now assemble your slider by adding the arugula on to one slice of the focaccia, add the mortadella on top, then pull apart the burrata and smear all over the arugula. Top the burrata off with the tomatoes, pistachios, crack of sea salt and place the other slice of focaccia on top. Cut the focaccia in half and then cut those halves into four smaller squares of the panino, creating a total of 8 sliders. Pierce each slider with a toothpick down the center to hold the ingredients in place and turn the slider on its side. Now sprinkle the slider with extra pistachios and enjoy!
